Pikelets with fruit and ice cream

Pikelets (pronounced as paik-let) are basically mini fluffy pancakes! And kids love them! Even more so when they add a few extra toppings like ice cream and their favourite fruit.

The pikelets are a great breakfast option as they are quick and easy to do. You can either mix the batter by hand or simply add all the ingredients together in a bowl and use a hand blender to combine them. The components required I think are a staple in everyone’s pantry, so you can make this on the fly without planning ahead.

To enjoy the pikelets you can add your favourite spread, jam, ice cream, fruit or whatever you like! Due to the extras we eat them with though, is the reason why I use a small amount of sugar in the batter.

Ingredients
  • 1 cup self-raising flour, 150g
  • ½ tsp bicarbonate soda
  • 1 tbs caster sugar
  • 175 mL milk
  • 1 large egg
  • 15 g unsalted butter, melted for pan brushing
Toppings
  • Fruit
  • Vanilla ice cream
Instructions
  1. Sift the self-raising flour, bicarbonate soda and caster sugar in a bowl and slightly whisk them to evenly spread. Whisk the eggs and milk in a bowl, then slowly mix in the sifted dry ingredients. Let the batter sit for 10min or so. During this time you can get your toppings organized.
  2. Once the batter has rested, heat a pan on medium heat and brush some unsalted butter on the surface. Add 2 tbs of the batter to create one pikelet. Allow some space between the pikelets in the pan. Depending on the size of the pan you can make 3-5 pikelets at a time.
  3. Allow 4min for the pikelets to cook on one side or until a brown colour has been reached and the top surface isn’t as runny. Then flip on the other side and cook for 2min or until a brown colour forms. The recipe makes for about 15 pikelets. Enjoy them warm with your favourite ice cream, fruit or whatever you prefer.
