Quick and easy grilled chicken breast
Chicken must be the most accessible protein and one that is consumed the most amongst the omnivorous population. And with this quick and easy grilled chicken breast recipe I’m sure it will become even more popular in your household!

You can customize this recipe to your liking! From marinating and creating a variety of meals with it, my quick and easy grilled chicken breast recipe is as flexible as can be. The spices I added are a stable in my pantry and are some of the typical Greek flavours, but can totally be changed to your choosing.
Once you finish cooking this quick and easy grilled chicken breast recipe you can eat it on its own with a side of rice / bulgur or veggies. You can even add the chicken in a wrap with some fresh salad! Here I paired it with some kritharaki (orzo pasta in a red sauce) and some blanched broccoli!
Preparation
To prepare the chicken breast you just simply need to slice it equally along its length so that you get two thinner pieces (your butcher can do this as well if you ask) and then just marinate it with the spices. The three key steps to follow to get tasty succulent chicken breast each time are:
1. slice the chicken breast in equal thickness along its length so you have even cooking
2. marinate the chicken for as much as possible, overnight would be great but even 20min should so the trick
3. cook each side using a hot grill pan for 3 min WITHOUT touching it. I put the timer on and I don’t touch the chicken before that alarm goes off!

- 1.2 kg chicken breast fillets, 4 pieces
- 2 tbs olive oil
- 2 tbs dry oregano
- ½ tbs paprika, sweet or smoked
- 1 ½ tsp salt
- ½ tsp black pepper

Slice each of the chicken fillets in half equally along its length. In the end you will end up with 8 thinner chicken fillets. You may ask your butcher to do this for you. Add the chicken fillets in a large bowl, drizzle with the olive oil and set aside.

Blend all the spices separately in a small bowl and then sprinkle them all over the chicken. Use your hands to massage the spices well on the chicken. Cover with cling wrap and place in the fridge for a minimum of 20min to marinate or you can leave it overnight.

Once you are ready to cook, heat a skillet or a frying pan of your choice on a high heat with a bit of olive oil (2-3 tbs). Then place 2 chicken fillets on the pan to cook for 3min on each side. Set your timer on and do not turn them over before that time. Use tongs to turn the chicken fillets over instead of piercing it with forks.

After each side is cooked, place the chicken fillets on the serving plate with some aluminum foil to cover it and let it rest while you cook the rest of the fillets. Pair the chicken with whatever side you prefer while it is warm.
