Baked chicken bites
Crispy and healthy nuggets
These baked chicken bites are my go to version of homemade nuggets. It is a favourite with everyone in the family, young and old. The kids especially just keep coming back for more. Great served with a fresh salad or some baked fries since the oven will be turned on.
I don’t tend to use an egg wash as the crumbs stick to the chicken anyway because of the olive oil. It also makes the process of preparing these baked chicken bites quicker and less messy.
When they are first out of the oven they are quite crispy and sooooo easy to just keep eating one after the other! If there are any leftovers (which most likely will not be the case) you can eat them the day after but they will not be as crunchy although still flavoursome 😉
- 1 kg chicken tenderloins
- 2 tbs olive oil
- 2 cups panko crumps
- Olive oil spray
- 2 tbs dried oregano
- ½ tbs sumac
- ½ tbs sweet paprica
- 1 tsp salt

Preheat the oven to 220°C. Cut the chicken tenderloins using scissors into 2cm pieces in a bowl. Marinate the chicken using the seasoning mix.

Cover the bowl with cling wrap and place it in the fridge. Allow the flavours to combine for at least 30min or overnight if you can.

Add the crumped chicken onto a large baking tray lined with baking paper. Spray the chicken with olive oil. Place it in the oven for 10min or until golden brown but be careful you don’t leave them too much longer as they will dry out.

Serve warm with your favourite sauce.
