S’mores popcorn cups

Easy birthday party snack

 

The idea of these S’mores popcorn cups came to me while I was experimenting with the ingredients, trying to create some party snacks for my daughter’s birthday. Initially I started by adding Maltesers with popcorn and although it tasted good, the Maltesers were not easily distinguished with all the melted chocolate. The next combination was with broken pieces of pretzels. The salty pretzels with the sweet chocolate turned out great and I’ll probably end up making that too on the day!

This is such a quick and easy recipe, which can also be made the day before the party or the occasion planned.

Ingredients
  • 240 g Cobs popcorn
  • 120 g Digestives nibbles coated with milk chocolate
  • 100 g pink and white mini marshmallows leave some out to add on top for decorating
  • 500 g Cadbury dairy milk chocolate
  • 28 paper muffin cups
Instructions
  1. The ingredients will make about 28 muffin cups, which is a fair bit to add in the cups before the chocolate solidifies. Hence if you want to make the full amount I would suggest you do so in two batches, otherwise the mixture will crumble.

  2. Melt half the chocolate by adding it in a microwavable bowl and heat it for 1min. After that stir it and return it to the microwave for 30seconds before you stir it again. Repeat the process as required until the chocolate melts completely. Meanwhile line your muffin tins with the paper muffin cups.

  3. Add half the ingredients in one large bowl. Place the popcorn first followed by the marshmallows and chocolate biscuit nibbles. That way they will combine better with the popcorn in comparison to if they were on the bottom of the popcorn.

  4. Pour the chocolate over the ingredients and mix well. Quickly fill up each cup with the popcorn mixture before the chocolate solidifies. Press the mixture down so that each cup is filled well. You may choose to do so with a big spoon or wear food handling gloves to use your hands.
  5. Repeat the process to do the next batch with the other half of the ingredients. Place the tins in the refrigerator for at least 1-2 hours before serving. Can last up to 5 days if chilled, if they are not all consumed at once!

Recipe Notes

The chocolate is enough so that the ingredients can stick together, so it still remains quite brittle. In other words there isn’t excessive amount of chocolate to make it difficult to bite once it is hardened or too indulgent. If you prefer more chocolate feel free to add more.

 

I have also made it into squares, by placing the mixture in a large tray (45x34x6.5cm aluminium baking tray) and once it solidified i cut it up. In that instance I found that adding 600g of chocolate worked better so that the slab did not crumble when i cut it.
