Turmeric cabbage carrot sauté

Do you have a cabbage stuck somewhere in the back of the fridge calling for attention? Or do you simply want a side dish that is light? If yes, then you must definitely try this quick turmeric cabbage carrot sauté!

I started making the turmeric cabbage carrot sauté when I had enough of eating it raw in a salad. Also it is a great alternative to eating potatoes or any other high carb vegetable.

Turmeric is a very powerful spice which has great health benefits, supporting digestion and reducing inflammation. The effects are heightened when you add pepper as it allows curcumin (the active ingredient of turmeric) to be absorbed more efficiently in the body.

The method is really easy and incredibly quick! All that the prep involves is roughly slicing the cabbage, not very fine, and then shredding the carrots. After that, you quickly sauté and then simmer covered with a bit of water, the turmeric, salt and pepper.

In the photos here I have paired it with my rice pilaf to make it completely vegan, but I have enjoyed eating the turmeric cabbage carrot sauté with some grilled chicken and fish before too.

Ingredients
  • 3 tbs olive oil
  • 800 g cabbage, sliced, 7 cups
  • 2 medium carrots, peeled and shredded
  • 1 cup water
  • 1 ½ tsp turmeric powder
  • 1 tsp salt
  • ¼ tsp black pepper
  • coriander leaves, chopped for garnish
Instructions
  1. Prepare the ingredients by slicing the cabbage into not very thin slices and coarsely shredding the carrots.
  2. Place a large frying pan or pot on high/medium heat with the olive oil. Then add the cabbage and carrots, to sauté for 3min or so, stirring it occasionally.
  3. Pour in the water and season with the turmeric powder, salt and pepper. Stir all the ingredients and then cover with a lid for 5min on a medium heat. The cabbage will wilt and turn into a vibrant yellow colour. Serve warm with rice or a protein of your liking!
