Cherry tomatoes and bocconcini mint salad

Ingredients

Salad

  • 400 g cherry tomato medley washed
  • 100 g cherry bocconcini
  • ¼ tsp dry mint or you may substitute it with fresh mint leaves

Dressing

  • 2 tsp white balsamic vinegar with pomegranate
  • 2 tbs olive oil
  • ¼ tsp salt

Instructions

  1. Cut the cherry tomatoes in half to allow the juices to be released and in doing so more flavour is created. Quarter each of the bocconcini balls. The cherry bocconcini is small in size but I usually cut it in 4 pieces in a salad so that you enjoy more of it in smaller mouthfuls.
  2. For the dressing just mix all the ingredients together and drizzle it on the salad. You may change the amounts of each condiment to suit your taste.
