How to make frappe – Greek iced coffee

Frappe is a very popular iced Greek coffee, drunk during the warmer months especially. When we spend our summer holidays in Greece or Cyprus it is our go to drink, to the point that we end up replacing water for it! Every café and beach bar has it on the menu and you can ask for a sketo (no sugar), metrio (a little bit of sugar) or gliko (sweet) frappe. Lucky we can find it at different places here in Australia too or simply make it home!

The equipment to use

Before you can start making frappe you need to figure out what equipment to use to make the foam – αφρό. The foam should be well beaten so that when the glass is inverted it doesn’t drip and the foam formed should be thick but pillowy. In the photo above are some different ones I have at home. The best result for me is given by the first two – the milkshaker and the frappe beater, as they are the most powerful and I could use them with the glasses I have at home.

My frappe mixer was purchased in Cyprus but you can find it in Australia from international shops or online. There are battery operated or electric versions, which in my opinion are better as they are more powerful and takes less time to make frappe. The ingredients and method

What you need to make frappe includes instant coffee, sugar, cold water, milk and ice. To create the foam you need to use minimum water about 2-3cm in height, depending on the glass you are using, and beat the coffee and sugar in it. Next you add the ice, more cold water and a dash of milk. All done!

Ingredients
  • 2 tsp instant coffee
  • ½ tsp sugar
  • cold water
  • cold milk
  • ice cubes
Instructions
  1. The ingredient amounts may vary based on the size of the glass you use and of course your personal tastes. I used a glass 16cm tall and about 8cm wide.
  2. Add the coffee, sugar and 2-3cm of water. Use the frappe mixer or milkshaker to beat the mixture until the foam formed is thick and won’t drip. Next add the ice cubes, ice water and a little bit of milk based on your preferences. Enjoy!
